This excellent coffee is produced in Chiapas highlands of Motozintla. The coffee is produced by small farmers organized in Cooperatives, which are certified by organic food organizations. The cherry is carefully harvested and processed into parchment by each small producer with a strict quality control by their Cooperative. The Cooperative recollects and purchases only the best quality parchment before delivering it to the dry-mill facility in Tapachula, Chiapas.
Cup profile: This strictly high grown arabica gives an experience of a chocolate, vanilla and almond aroma, with a delicate sweetness.

This exceptional coffee originates from the highlands of Chiapas, grown at altitudes ranging from 1,100 to 1,600 meters above sea level on rich volcanic soils shaped by a cold, rainy microclimate. These conditions naturally slow the maturation of the cherry, concentrating sugars and developing remarkable complexity in the cup. The coffee is cultivated by indigenous farming communities organized into cooperatives, where ancestral knowledge and a deep connection to the land are passed down through generations. Every cherry is selected and harvested entirely by hand, then processed using traditional artisanal methods that have defined the character of this coffee for decades. The result is a proudly 100% Mexican coffee with a cup score of 82–83+, offering a sensory experience reminiscent of the complexity and warmth of Mexican mole, rich, layered, and unmistakably unique. While the global organic coffee market offers numerous quality options, we passionately believe this coffee surpasses them, delivering a superior cup that reflects the exceptional conditions, indigenous craftsmanship, and uncompromising standards behind every lot we export. Once harvested and processed into parchment, the cooperative delivers only the finest selection to our headquarters in Veracruz.
Our quality standards for this coffee allow no more than 12 non-primary defects per 300 grams, in strict compliance with SCA (Specialty Coffee Association) grading protocols. Every lot is evaluated and approved by our in-house panel of certified Q Graders, ensuring that only coffee meeting the highest standards for our clients worldwide.
Harvest time: The crop season begins in January and is concluded in April.

Sustainability: All of our coffee beans are classed as speciality coffee which represent a commitment to quality, fair trade, and ethical sourcing. They are traceable directly to the smallholder farms and the farmers who grow them, and are either Fairtrade, Organic or Rain Forest Alliance (RFA) certified, or perhaps more importantly are grown as a collective or cooperative to assure a fair wage, investment in the community and good environmental practice.
