A coffee for the connoisseur Old Brown Java comes from the island of Java where it is weathered or long aged for two years to give it the distinctive flavour. It has a mild acidity, sweetness and full body taste. The coffee bean was originally used as ballast in the old sailing ships and the sea water gave it that distinctive flavour. This is still achieved today by allowing the coffee to be exposed to the sea breezes and wind during the two year weathering process. Old Brown Java is the more famous of all the aged coffees and sought after.
